Last week, on a random Monday night, I decided I needed to roast a whole chicken. When the world feels like it’s falling apart, some people take a nap… apparently, I needed to make a whole chicken.
I almost served this with mashed potatoes or baked potatoes but it’s springtime so I felt I had to embrace spring cooking by serving this chicken with rolls and a potato salad.

I knew I wanted a potato salad that was simple but very extra, naturally. So I made a loaded potato salad, basically everything I would load up on a baked potato, I put into my potato salad:
Shredded cheese
Sour cream
Green onions
Crumbled bacon
When I tell you this potato salad nearly outshined my chicken…I’m telling you it nearly outshined my chicken! 😊

Loaded Potato Salad 🥔
Serves 4-5 as a side dish. You can double or triple this recipe for larger gatherings.

Ingredients
2 lbs russet potatoes (about 3 medium-sized potatoes)
1/2 cup mayo (I love Duke’s)
1/4 cup sour cream
1 Tbsp Dijon mustard
2 Tbsp apple cider vinegar
2 tsp kosher salt
1/2 cup shredded cheddar
1/2 cup crumbled bacon (about 3-4 slices bacon)
2 Tbsp chopped green onions
Instructions
Peel your potatoes and cut them into bite-sized cubes. Add the cubes to a large pot. Cover with water, add 1 Tbsp salt, and turn the burner to high. Allow the water to come to a boil, then lower the heat and simmer for 10 minutes. The potatoes are done when they can be pierced with a butter knife. Drain the potatoes and water in a colander. Set aside.
In the bowl you’re using to serve the potato salad, whisk the mayonnaise, sour cream, Dijon mustard, vinegar, and salt. Add the cheese, crumbled bacon, and green onions. Mix to combine. Add the potatoes and gently mix to bring everything together.
Refrigerate until you are ready to serve!

I’m making this for the first time tomorrow. I have no doubt that it will be supreme. I just wanted to say thank you for being specific about the green onion quantity as most of the time I am confused about what exactly is ONE green onion. Is it the three stalks in one or one stalk? Heck if I know. 🤷🏼♀️
